Asian Style Chicken Meatballs with a Vermicelli Noodle Salad - Bronze V 60

This is one of my family’s favourite salads. It’s easy to make and economical too. The salad has amazing texture and flavour, with soft noodles, fresh crisp vegetables and the sprinkling of fried shallots (which is optional), gives it a lovely crunch. The salad is then tossed in a refreshing and tangy sweet and sour sauce. Although the chicken meatballs are very flavourful on their own, both the flavours of the salad and the meatballs work very well together. And it makes for either a very satisfying meal or quick lunch.

This comfortably serves 5 as a main meal. However, it may serve more in your family. I sometimes find it hard to judge how much a ‘normal’ family eats, as we have 3 boys, and they eat A LOT!!
